Pioneer Womens food is sticking to my bones a little bit so I’m taking a week off to eat healthy.

Steak Kabobs

Who doesn’t love kabobs! They are one of my favorite meals because I love the taste of grilled vegetables but they always fall through the holes. So frustrating!

Cut up your favorite vegetables to grill. Mine included red bell pepper, zucchini, yellow squash and onion.

I usually make chicken or steak teriyaki kabobs but today I decided to go down a different path.

We are going to make a burrito bowl with steak and vegetable kabobs, topped with fresh pico de Gallo, sour cream and a lime. I was also going to top it with black beans and grilled corn but its been a long week.

I am using T-bone steaks and I know someone is probably going to hate me for this but we have a bunch in the freezer. My husband and I don’t like to eat just a grilled steak so I have to find dishes to put steak in instead. I topped the kabobs with a little olive oil and a combination of spices like garlic, onion powder, chili powder, cumin, salt, pepper and paprika.

The Pico De Gallo is very simple. Equal amounts tomato, onion, jalapeno and cilantro with lime, salt and pepper.

So Delicious! I forgot to tell you to add avocado as well which mellows out the heat. If you can get a bite of everything on one fork its an absolutely perfect bite.

This is the part that shocked me the most. My husband said next time he wants it with quinoa. What???? This is crazy! I have been pushing quinoa on him for years and finally he asks for it. I’m overjoyed!
