Quick Greek Lunch

I use to work at this restaurant that served something called a Greek Pita. It was a toasted pita bread topped with hummus, salad(lettuce tomatoes cucumber relish and feta tossed in a balsamic vinaigrette). This is my version but without it all being mixed together.

I told you guys I was going healthy for the week but I just had to have some pita as well.

So I cut up some pita bread and sprinkled it with olive oil and salt. Put it under the broiler just to toast up a little bit.

As far as the salad I put romaine, cucumbers, pico de gallo, feta, red onions and avocado. Topped it with a balsamic dressing. I like to make my dressings in a mason jar, learned this from pioneer woman of course.

Balsamic Dressing

Olive oil

Balsamic

A little sugar

Salt and pepper

Garlic powder

Small squeeze of Dijon mustard

Dash of dried basil

Shaken in a mason jar is great but if you want an even better dressing blend this up and it becomes this slightly thick amazing dressing.

Now the perfect bite is some pita bread with hummus spread over the top with a little bit of the salad on top. Eat it like a pizza! So so delicious and healthy.

PS I don’t know if this is anything like Greek cooking but I would like to think it is.
