Mini Quiche

I love Quiche but also want something quick and easy to grab in the morning and this was the perfect solution.  I have seen many people do this before so I thought I would give it a try.

Mini Quiche

Package of frozen hashbrowns

Olive Oil

7 eggs

1 cup half and half

1 cup shredded swiss cheese

1/2 cup diced ham

Salt and Pepper

Start with a cupcake pan a place just enough frozen hashbrowns to cover the bottom.  Then add a splash of olive oil to each cup.  Cook this at 375 for 8-10 minutes just until hashbrowns are golden brown.

Lower temperature to 350.  Mix together eggs as well as half and half with salt and pepper to taste.  Whisk really well.  Now on top of the hashbrowns put a few pieces of ham and a little bit of cheese in each hole.  Next slowly poor in the eggs mixture leaving some room at the top because these will puff up a little bit.  Cook for 15 to 20 minutes keeping a close eye on them. When the eggs look set and slightly golden on top they are done. 

Let them sit for 5-10 minutes before you take them out so they don’t fall apart.  This is so easy and delicious for me to grab in the morning and was pretty easy to make.  Hope you enjoy!
