Chicken Sheet Pan Meal

Sheet pan meals are all the craze right now and I see why.  Only one pan to clean up when your done plus if you put foil on the pan it is not even dirty.  LIFE CHANGER!!!  Dishes are honestly the worst thing about cooking.  Even more so when I am cooking because somehow I need to use every pan in the house.  My husband can attest to this when he is washing dishes for an hour afterwards.  Plus the endless supply of baby bottles that we have to clean all day everyday.  I just quit breast feeding and this is the only bad side to quitting otherwise it is nice to have my body back to myself.

The other great side about sheet pan meals is they are also great for you.  Just protein and vegetables is a great way to end your day.

Chicken Sheet Pan Meal

  • 1 lb. boneless, skinless chicken breast
  • 34 cups broccoli florets
  • 1 large sweet potato cut into small cubes
  • 2/3 cup red onion, chopped
  • 2 cloves garlic, minced
  • 1/3 cup olive oil
  • 2 tsp. italian seasoning
  • Salt and Pepper
  • I add a couple mushrooms towards the end of cooking time (optional)

Arrange the sweet potato, red onion, garlic, and broccoli on a sheet pan covered with foil.  Sprinkle over half of the olive oil and seasonings leaving the rest for the chicken.

Cook the vegetable first at 375 for 10-12 minutes.

Take the pan out and place the chicken topped with the seasonings among the vegetable cook for another 10 minutes.  Take the pan out and stir the vegetable.  Then place the pan in for another 10 minutes.  The chicken should be done now but add more time for a thicker piece of chicken.  You can also cut your chicken into cubes for less baking time.  I only cooked one piece of chicken because it was just me for the night.  This was so delicious and amazing left over as well.

Clean up was a piece of cake.
